Beak and stomach
Tortoises have no teeth. A keratinous beak with sharp cutting edges crops grasses and leaves, which pass down the esophagus into a simple, single-chambered stomach where acid and enzymes begin breakdown. Because the beak shears rather than grinds, food arrives in the stomach in relatively large pieces.
Hindgut fermentation
The defining feature is a large hindgut. Beyond the small intestine, where enzymatic digestion and nutrient absorption occur, sits a capacious colon populated by microbes that ferment cellulose and other plant fiber the tortoise cannot break down on its own. Fermentation yields short-chain fatty acids that are absorbed as an energy source, making the tortoise a hindgut fermenter like the rabbit and the horse.
Transit, temperature, and the cloaca
As ectotherms, tortoises digest at a rate set by body temperature, and passage through the long gut is slow. The colon also reclaims water before waste reaches the cloaca, the shared opening for the digestive, urinary, and reproductive tracts.
